•To responsible for supervising the culinary production by the Sushi and Sashimi counter and Yakitori counters of Japanese cuisine at the multi-national cuisine floor of the clubhouse. •To assist Chef de Cuisine in planning, menu creation and design, cost control, production, preparation and presentation of menus. •To ensure the high quality sashimi and sushi with authentic Japanese style and maintain the food seasonality throughout the menu rotation and engineering. •To deliver the highest standards of food preparation and delivery, as well as effective communication across all sections of the kitchen operations • To handle all guest complaints and inquiries in a courteous and efficient manner, follow through to make sure problems are resolved satisfactorily. • To ensure that all guest contact culinary employees in the outlet deliver the brand promise and provide exceptional guest service at all times. •To maintain the hygiene level to HACCP standards & procedures, kitchen equipment and follow up relevant issues •To maintain the cleanliness of food storage areas and manage food storage in accordance with the Club’s standards and conduct stock take on regular basis

•A minimum of 10 years’ solid relevant work experience with 5 years of working as a Head Chef at an upscale Japanese restaurant in hotel or premium Japanese restaurants •Possess strong experience in Japanese cuisine, specialty in sushi, sashimi and yakitori execution •Proven records in managing high volume of covers and high rotation of menu items; solid work experience in kitchen administration work and system •Strong knowledge of Japanese seafood items with seasonality •Strong passion about delivering high quality, seasonal food is an essential success factor •Strong understanding on the operation of relevant section including the daily operation, cost control and procurement system, HACCP, Work Safety and employee related matters •Good communication in written and spoken English
